Is a 4 GB or 2 GB version of the SoM available as well?

Unfortunately, only the 1 GB version is available.

Do you have further stock beyond 2000 units of the Coral 1 GB SoM?

No, only a little bit less than 2000 units are available. Once they are gone, the product will not be available anymore. It is EOL due to RAM sourcing / BSP issues.
